Tomato salsa and mozzarella salad

Start to finish: 30 minutes

Pre time: 20 minutes

Serves: 6

2 large balls of buffalo mozzarella

8 medium Flavorite tomatoes sliced, roughly chopped

1 red chilli, seeded and finely chopped

1 small red onion, finely chopped

3tbs torn fresh basil

1tbs lemon juice

3tbs olive oil

Salt flakes and freshly ground pepper

Cut mozzarella into 4cm thick slices and arrange in overlapping circles on a platter. Put the tomato, chilli, onion and basil in a bowl. Whisk together lemon juice and oil with salt and pepper to taste. Tip over tomatoes and toss. Spoon the tomato salsa over the mozzarella and drizzle with a little extra olive oil.
