Tomato paste

750g ripe Flavorite tomatoes

2 onions

1 carrot

1 stalk celery

2 fresh basil leaves (or dried basil)

2 sprigs of parsley

1 tbspn olive oil

Sugar, salt and pepper to taste

Dice tomatoes, onion, carrot and celery and place in a large saucepan. Add oil and herbs. Cover and simmer for 30 minutes. Then press this through a sieve. Return to the saucepan and boil uncovered until desired consitency.
