Teriyaki Beef and Avocado Salad

Prep Time: 15min + marinating

Cooking Time: 10min

Serves: 4

600g beef strips

2 cloves garlic, crushed

1/4 cup teriyaki sauce + extra

1 onion, sliced into thin wedges

1tbs oil

2 avocados, seeded, peeled, sliced

1 red capsicum, diced

8 Flavorite cocktail tomatoes, quartered

250g tin bamboo shoots, drained

2 bunches bok choy, chopped and lightly steamed

Combine beef strips, garlic, teriyaki sauce, onion and oil in a shallow dish.Allow to marinate for atleast 30mins.

Heat a non stick pan or wok. Fry beef in batches over high heat for 5min. Set aside.

In a seperate bowl, combine avocado, capsicum, tomaotes and bamboo shoots. Fold through 1 tbs teriyaki sauce.

Divide steamed bok choy on to serving plates. Top with sald and cooked beef strips to serve.
