Mild chicken curry

Serves: 6


1.5 kg organic chicken drumsticks

5cm piece ginger, peeled, finely grated

2 tsp ground cumin

1 cup coconut milk

2 tsp ground corriander

1/2 cup almond meal

2 tsp garam masala

1 cup chicken stock

1/4 cup turmeric

8 cardamom pods

3 tbs vegetable oil

1 cinnamon stick

2 medium ripe Flavorite tomatoes

10 curry leaves

2 medium onions, chopped

2 tbs shredded corriander

4 garlic cloves, finely chopped


Trim chicken and remove knuckles if liked. Combine cumin, ground corriander, garam masala and tuneric with 1 tbs of the oil and rub into the chickem.

Heat remaning oil, add chicken and cook 2-3 mins to brown. Put tomatoes, onion, garlic and ginger in a blender and whiz to a paste. Add to chicken and cook 5min. Add cocnut milk, almond meal, stock, cardamon  pods, cinnamon stick and curry leaves and cook gently for about 45 mins until chicken is cooked.

Stir through corriander and serve.
