Marinated Chops with Roast Tomatoes

Prep Time: 10 min

Cooking Time: 30 min

Serves: 4

2 tbs honey

2 tbs red – wine vinegar

2 cloves garlic, finely chopped

Salt and pepper to taste

8 lamb chops

8 small ripe Flavorite Tomatoes

1 1/2 tbs balsamic vinegar

1 tbs olive oil

Steamed greens to serve

Combine honey, vinegar, garlic and seasoning. Transfer to plastic bag.

Add chops and turn to coat. Marinate in fridge for atleast 30min or overbight.

Meanwhile, drizzle tomatoes with balsamic and olive oil, turning to coat.

Place on oven tray. Roast at 180C for 20min.

Heat health grill or hotplate to medium – hot. Cook chops 5 min each side, turning once.

Serve with roasted tomatoes and steamed greens.
