Lamb’s fry creole

1 Lambs fry


2 Onions

1 Carrot

1 Parsnip

2 Green peppers

1 Stick celery

1/2 Cup plain flour

1 Large tin tomatoes

375g Macaroni

Soak lambs fry in salted water for half and hour. Drain. Remove skin, slice and coat with flour. Heat oil and brown the lambs fry. Remove and drain.

Slice vegetables and boil for 15 minutes. Cook macaroni. Combine lambs fry and tomatoes with vegetables in a saucepan and season.

To serve, heap macaroni in the centre of a plate and surround with fry and vegetables.
