Gluten-Free Zucchini Quiche

1 Cup gluten-free bread crumbs

1 Small onion, chopped

4 Eggs, lightly beaten

3 Tbspns grated parmesan cheese

1 Tbspn gluten-free self-raising flour

1 Large flavorite tomato

5 Small zucchinis, grated

1 Clove garlic, crushed

300ml Cream

1 Cup grated cheddar cheese

Salt and pepper

Spread crumbs evenly over base of well-greased pie dish. Combine zucchini, onion and garlic. Add eggs, cream and cheeses and flour mix well. Season and spoon gently over crumbs. Top with sliced flavorite tomato. Bake in a moderate over for 45 minutes.
