175g Short bacon, rind removed
Corn relish- flavoured dip
100g Mixed lettuce leaves
150g Flavorite cherry tomatoes, halved
1. Heat a large non-stick frying pan over medium-high heat and spray with oil spray. Cook the bacon (in batches if necessary) for 3-4 minutes or until golden and crisp. Remove, drain on paper towel and cool.
2. Working one at a time, lay a tortilla on a flat surface and spread with corn relish dip. Top with mixed lettuce, flaovrite tomato and bacon. Roll up in a paper napkin, folding the base up to enclose the filling then sercure with string. Repeat with remaining ingredients.
3. Place in an airtight container and pack to take to the footy!
